Oliaigua, also known as Oliaigo in some villages, is one of Minorca's most traditional dishes. It used to be a farmers' food for its easy cooking and cheap ingredients. It's made with water -aigua in Catalan- and oil, -oli-, with several vegetables and leafy vegetables such as tomato, onion and pepper. It's always accompanied by a slice of bread or figs in summer.
