The rice N’ beans is a common delicacy in the Caribbean area, and in Costa Rica they prepare it with coconut. As it says, the dish is made with a base of rice and beans with coconut. The right bean to prepare it is the Black Eyed Pea, but it is hard to find, so in many cases they prepare it with Red Beans. The recipe is complemented with thyme, onion, sweet chili, Panamanian chili and a little bit of salt. Delicious!
