The nougat is a very typical dessert especially in the region of Alicante and Catalonia although in other regions of Spain it is also. It’s a pastry shaped -doughy or compact- that’s usually eaten during the Christmas season and is a sweet dough that has many different flavors depending on the ingredients used. The most famous recipes contain nuts -almonds peeled and roasted for example-, honey, sugar, fruit, etc. The most common alicantina version is a hard tablet in addition to the clear egg mass, pieces of almonds, sugar and honey usually up and down a layer of wafer, a thin waffle white made from wheat flour.
