The arroz con gandules is a typical dish of the Christmas season in Puerto Rico. One makes a stew of pigeon peas, complemented with some spices and herbs. In addition, in the final stages of preparation of the dish is, the star ingredient: plantain and pepper strips to enhance the flavor.
