The Ropa Vieja is the way many countries in Central and Latin America tell the shredded meat, specifically the matambre cut. The meat is cooked with tomato, garlic, onion and a little of paprika and served with a portion of rice. It is common in Panama to serve it with fried plantains, these are fried flattened green plantain chips.
