The cheese is one of the most common ingredients in Gran Canaria. Most of them are craft elaborated and have the protected designation of origin like this Queso de Flor, one of the most famous. It has this name because during its elaboration, to curdle the milk they use the cardoon flower. It has a bitter taste and a very creamy texture.
