The wrinkled potatoes with mojo is the top dish of the Tenerife cuisine and in general of the Canarian Islands. The papas are potatoes which go with the typical sauce of the island, the mojo. It is made of oil, vinagar, garlic and salt. There are two types of mojo: the red one which has sweet pepper and the green which has coriander.
